Recently, i found that myself have strong passion in baking cookies.I remembered the first time bake cookies was all burned.The top part and the bottom part of cookies turned black. Lol ..I’m feel so shame and asked my husband why such easy baking recipe i can’t handle well.My husband replied,baking is like an art. It needs passion + patient!Do you agree that? Yeah, I’m totally agree!In baking really need more patient, not the first time can get the best result.Sometimes, you have to trial and error to get the best texture food.Anyway, i’m not the expert chef in baking or cooking but i could say i’m fully enjoy what i’m doing right now ^-^ During free time, i will keep learning the baking skill from others, and bake some cookies or dessert that i like. The most important part is that i can enjoy good food all the time. Lol ..So,what the good food for today recipe? I want to share with you guys the French Meringue Cookies recipe..I made it two flavours which is my lovely taste green tea matcha and cocoa flavour.It’s in tiny star and round shape, look lovely =) Let’s get started ~

最近,我发现自己对烘烤的热诚越来越强烈。记得第一次烘烤出炉的饼干全烤焦了。饼干的顶部和底部全变成黑色。哈哈..我觉得很羞愧,便问了我老公为什么这样容易烘烤的食谱我都无法处理好呢。丈夫回答说,烘焙就像是一门艺术,它需要热诚+耐心!你同意吗?是的,我完全同意!在烘烤真的需要更多的耐心,而且不是第一次就能得到最好的结果.很多时候,你必须不断尝试错误,以获得最佳的食物质感.无论如何,我不是专家烘焙师或烹饪厨师,但我可以说,现在我充分享受我所做的一切^-^在空闲的时候,我会不断学习别人的烘焙技巧,烤一些我喜爱的饼干或点心之类的。最重要的是,期间我可以享受美食。哈哈。那么,今天的美味的食谱是?我想与大家分享法式蛋白酥饼..我做了两种口味,我最爱的抹茶口味和可可口味.它缩成小小的星星和圆形,外观可爱讨喜= )让我们开始吧〜

Ingredients /食材

* This recipe for small portion serving (you can double up the ingredients if want more)
* 这是少分量食谱(如想制作多,分量就自加)

1) Egg white – one egg 50gram
蛋白-1粒蛋分量 50克

2) Powdered sugar – 40gram
糖粉-40克

3) Lemon juice – 1 teaspoon
柠檬汁-1小匙

4) salt – 1/4 teaspoon
盐-1/4小匙

5) Green tea powder – 3 gram
绿茶粉-3克

6) Cocoa powder – 3 gram
可可粉-3克

Steps / 步骤

Prepare 2 piping bag with one star tip and one round tip
准备好两个挤花袋和一个星形和花嘴及圆形的花嘴

Place egg whites, lemon juice, and salt in a large bowl and beat using a mixer set on low speed until foamy.Then add in half of sugar beat on medium speed.
将蛋清,柠檬汁和盐倒入一个大碗里,用搅拌机​​设置在低速打至起泡。然后,加入一半的糖粉,以中等速度打发。

Gradually add remaining sugar and increased medium speed continue beating until egg white become shining and stiff peaks
逐步加入剩余的糖,增加中速继续打发,直到蛋清变得光亮,坚硬的山峰即可。

The meringue divided for 2. One add in green tea powder.
将打发好的蛋白分成两粉。一份加入绿茶粉。

The other one add in cocoa powder.
另外一份加入可可粉。

Mix well the cocoa powder and meringue.
将可可粉和打发蛋白混合均匀。

Mix well the green tea matcha powder and meringue.
将绿茶粉和打发蛋白混合均匀。

Then, place the different meringue mixture into different piping bag.
然后,把拌好的蛋白混合物分别倒入不同的挤花袋里 。

Start to pipe onto prepared baking sheets pan.
开始挤在准备铺好的烤培纸盘上。

Pre-heat on 100C , bake for 60 minutes. (it’s depends on your temperature oven)
预热烤箱在100度,烘烤60分钟。(每个烤箱温度有差,温度自已调整)

Done ! Meringue bake very well, cookies are completely dry. I’m so happy with that ^-^ Once out from oven, let the cookies cool down then immediately store in an airtight tupperware. Try not exposed to air for too long,because meringue cookies easy get moist especially in high humidity country and turned sticky.

完成!蛋白酥饼烤得很好,饼干外层完全干透了。我非常开心^_^ 当饼干取出后,将它们完全冷却,立刻装入保密盒子里。尽量不要接触空气太久因为这款饼干很容易潮湿特别是在高湿度的国家,容易变成很粘手~
