Pan-fry Eggplant with Bell Pepper & Tomato

Eggplant contains many vitamins and minerals that are good for health. Frying the eggplant is one way to prepare this healthy dish. In this recipe , i’m using the smaller eggplant and pan-fry them whole. So, let’s started ~

茄子含有多种维生素和矿物质,对健康有益。用油锅炒茄子是其中一种茄子烹饪方式。在这个食谱当中,我用的是小茄子,完整的放入平底锅里煎。那么,让我们开始〜

Ingredients /食材

1) Eggplant – 2 pcs (cut half and use knife to cut line at the back of eggplant)
茄子-2颗 (切半 ,再用刀子往茄子背部割一下)

2) Tomato – 1 pc
番茄-1粒

3) Yellow Bell Pepper – 1 medium size
甜黄椒 -1颗 (中型的)

Steps / 步骤

1) Heat up the pan. Turn to medium low fire to fry the eggplants with olive oil . The eggplants will absorb oil very fast . So, you need to add more oil while cooking.Then fry the eggplants  for 2-4 minutes each side until golden brown. Set aside.
倒入橄榄油热一热锅子,然后以中小火煎茄子。茄子很容易吸油。所以,在煎的过程还需要添加油分。然后,茄子的两面各煎2-4分钟至金黄色即可。煎好后,放一旁备用。

2) Pour in the chopped tomatoes and chopped bell pepper . Then add  2 pinch of salt and black pepper fry for 1-2 minutes .
放入番茄丁和黄椒丁,然后撒些盐巴和黑胡椒粉调味,翻炒1-2分钟即可。

Place the tomato and bell pepper on the top of eggplants and now are ready to serve . Done !
把炒好的番茄丁与黄椒丁放在茄子片上,准备上桌。完成!

Sprinkle some dry parsley flakes on top =)
撒上一些干的香菜片
