Soy Milk Veggie Soup

This is my highly recommended soy milk veggie soup for today. The soup base combined with unsweetened fresh soy milk and chicken soup while the soup contained my favorite vegetables and mushrooms. The soy milk is rich of protein and calcium, however, the vegetables and mushrooms are high in fiber & minerals. Having said that, it is a healthy energetic soup and good for diet too =)

今天我强烈推荐这豆奶蔬菜汤。汤底采用了无糖的新鲜豆奶和鸡汤做结合,并加入了我最喜欢的蔬菜类及蘑菇。豆奶中含有丰富的蛋白质和钙,而蔬菜和蘑菇具有高纤维和矿物质。简单说,这是一个非常健康的精力汤也助于瘦身的效果哦=)

Ingredients / 食材:

1)Unsweetened soy milk – 300ml
无糖豆奶-300毫升

2)Broccoli – 1 bunch
绿菜花-1束

3)Carrot chopped – 100 grams
红萝卜-100克

4)Anchovy – 20 grams
江鱼仔-20克

5)Swiss button mushrooms – 1 packed
蘑菇-1包

6)Onion chopped – half piece
洋葱-半颗

7)Seasoning with black pepper powder , salt , half piece of chicken cube
调味料-黑胡椒粉,盐巴,一半的鸡精块

Steps / 步骤:-

1) Heat oil in a deep pot, and saute the onion.When the onion soften, add some water with chicken cube and stir until chicken cube dissolved.
热锅里倒入少许的油,然后把洋葱爆香。洋葱开始软化后,加入少许的水和鸡精块,搅拌至鸡精块完全溶化。

2) Turn the heat to medium ,add in all the ingredients into a pot and pour in the soy milk.
开中火,加入所有的食材再倒入豆奶。

3) When it starts boil, skim off the scum , add the anchovy with 2-3 tablespoons of cornstarch mixture to thicken the soup .
豆奶开始冒泡泡后,把汤里的浮渣取出,加入江鱼仔和两至三汤匙的玉米粉混合液体勾芡汤底。

4)When all the ingredients are cooked through, then seasoning with black pepper powder, salt , sprinkle some parsley flakes then it is ready to serve hot .
当所有的食材煮熟后,加入适量的黑胡椒粉,盐巴,撒一些香菜片做调味就可以趁热上桌了。

5) Done ! 完成~
