Dairy Free Carrot Oatmeal Muffins

It is so simple and you can even decorated them with the lovely ribbon or lace as a gift to your friend. It’s save money and make even muffins look fancy! Let’s get started =)

DIY Cupcake Liners:-

Cut 5-inch square pieces of baking paper.
将烘培纸剪成5英寸方块的大小

Spray a muffin tin with vegetable oil cooking spray to hold parchment in place.
在蛋糕模具里喷上薄薄一层的植物油以固定纸杯子

Press each muffin cup with a small bottle or small glass to make sure it’s hold the shape.
利用小罐子或玻璃杯在每个模具里按压以确保它保持形状。

Decorate with lovely ribbon or lace. Done =)
利用丝带或蕾丝来装饰。完成~

Ingredient / 食谱:

*Pre-heat @ 180C / 预热烤箱在180度

DRY Ingredients / 干性食材:-

1) All purpose flour – 100g
低筋面粉-100克

2) Ground almond – 30g
杏仁粉-30克

3) Rolled oats – 50g
燕麦片-50克

4) Carrot – 50g (shredded)
红萝卜-50克(刨成丝)

5) Baking powder – 1 teaspoon
泡打粉-1小匙

6) Baking soda – 1/2 teaspoon
苏打粉-1/2小匙

7) Salt – 1 pinch
一小撮的盐

WET ingredients/ 湿性食材 :-

1) Soy milk – 100g
豆奶-100克

2) Lemon juice -20g
柠檬汁-20克

3) Grapeseed oil – 40g
葡萄籽油-40克

4) Brown sugar – 40g
黑糖-40克

5) Honey – 2 tablespoons
蜂蜜-2汤匙

Steps / 步骤:-

Mix in all the dry ingredients into a large bowl EXCEPT shredded carrot (it’s will be added at the last step).
将所有的干性材料放入大碗里混合均匀除了红萝卜丝(在最后的步骤才会把它加入)。

In another bowl pour in all the wet ingredients and stir until well combine and make sure the brown sugar is fully dissolved in the mixture.
在另一个碗中倒在所有的湿成分,搅拌直至充分结合,并确保黑糖充分的溶解于混合物中。

Combine the wet mixture into dry mixture and fold it until muffin batter. Small reminder here, don’t over mix the muffin batter , it’s okay if the batter is lumpy. If you over-mix ,then you will likely end up with rubbery texture of muffins.
将湿性材料和干性材料一起混合,然后搅拌至面糊状即可。 小提醒一下,不要过度搅拌面糊,如果面糊不够滑顺那也没关系。如果你过度的搅拌,那很可能蛋糕的质感会变成胶质的口感。

Add in the shredded carrot and gently fold into mixture.
加入红萝卜丝再稍微拌匀即可。

Scoop the batter and put on muffin tray with cupcake liners.Last, put the muffins into oven bake at 180C for 10 minutes, then turn down the temperature to 150C and bake for 15 minutes.

舀出小部分的面糊倒在已准备好的纸杯子里。最后,放入烤箱以160度烤10分钟,然后再把温度降低到150度,烤15分钟即可。

Once the muffins are ready , cool them on wire rack . Done !
当杯子蛋糕完成后,将它们冷却在架子上。完成!
