Pear and Chocolate Tart

简单而优雅的洋梨塔好吃又清爽。塔皮与塔陷是全素,完全无添加蛋。听起来是不是很棒呢;p 经过水煮糖浆的洋梨再搭配全素的巧克力卡士达酱可称是完美结合的甜点之一。外型优雅的洋梨塔非常合适任何的聚会及家庭式的下午茶享用。让我们一起开始制作这素食甜点吧~

Ingredients / 食材:
[Crust tart]

*Preheat the oven 180C / 预热烤箱在180度

(A)
Plain flour – 60 grams
低筋面粉- 60克

Wheat flour – 60 grams
全麦面粉- 60克

Brown sugar – 20 grams
黑糖- 20克

Salt – 2 pinch
盐巴- 2小撮

(B)
grapeseed oil – 40 grams
葡萄籽油- 40克

Peanut butter – 10 grams
花生酱- 10克

Soy milk – 15 grams
豆奶- 15克

[Filling / 塔陷: -]

Plain flour – 25 grams
低筋面粉- 25克

grapeseed oil – 25 grams
葡萄籽油- 25克

Soy milk – 250 grams
豆奶-250克

Brown sugar – 45 grams
黑糖- 45克

Vanilla extract – 1 teaspoon
香草精- 1茶匙

[Poached Pears / 水煮洋梨 : -]

Pears- 2 pieces
洋梨- 2粒

Plain water – 2 cups
白开水- 2杯(烘焙测量杯)

White sugar – 150 grams
白糖- 150克

Honey – 1 tablespoon
蜂蜜- 1汤匙

Lemon juice – half cut of lemon
柠檬汁- 半棵的柠檬

Steps / 步骤:-
Make the crust tart : / 制作塔皮

Combine all the flour ingredients (A) in a mixing bowl.
将全部粉类的食材(A)一起混合在大碗里。

Mix the peanut butter and grapeseed oil together and stir until combine.
把花生酱和葡萄籽油一起混合并搅拌均匀。

Pour the wet mixture into flour mixture and mix well.
将湿性材料倒入粉类混合食材里,再搅拌至无粉状。

Slowly add the soy milk and mix until become dough.
慢慢的加入豆奶,然后搅拌至面团。

Use the rolling pin to flatten the dough into 0.4cm thickness.
用擀面棍把面团压扁,擀成0.4公分的厚度。

Measure the tart mold and cut out the dough to ensure that the length is fit for that mold.
测量小塔模具的大小后将面团割出以确保该长度是足够符合塔模具。

Place the cut out dough into tart mold, cut out the excess dough and press tightly all around the corner. (coated a thin layer of veggie oil on tart mold to avoid the bottom part of crust tart stick on the mold.)
将割出的面团铺在塔模具上,把多出的面团整理好,再按压模具的周围。(在塔模里涂上薄薄一层的菜油以方便脱模)

Use the fork to poke few holes in the tart before bake.
在烤之前,先用叉子在塔皮上撮几个小洞。

Put the tarts crust into preheated oven and bake at 180 C for 10 mins then reduce the temperatures to 160 C continue bake another 15 mins until lightly browned and crispy.
放进已经预热好的烤箱中,以180度烤10分钟,之后把温度调低至160度再继续烘烤15分钟至塔皮金黄酥脆即可。

Make the Chocolate Custard:- 制作卡士达酱

Heat the saucepan with medium low heat. Pour in the oil into flour mixture and stir combine until smooth mixture.
开中小火,把油和粉类一起混合,然后搅拌至顺滑。

Add the soy milk and brown sugar, cook until the custard thicker consistency. Stir it constantly. When the custard start to boil,reduce the heat to low and cook another2-3 minutes. Then turn off the heat, set aside to cool down.
加入豆奶和黑糖,煮至达到浓稠度(过程中需要不停的搅拌)。当卡士达酱开始冒泡便把火转小,再持续的煮2-3分钟,熄火后放一旁冷却。

Make the Poached Pears:- / 制作水煮糖浆洋梨

Peel the pears and leaving the stem. Cut a slice off the bottom of each pear so that they can sit flat.Bring the water to the boil in a sauce pan. Then add the brown sugar,honey and lemon juice and stir until dissolved.Then put the pears into saucepan and make sure they are covering under the water。
把洋梨皮削掉并保留洋梨蒂。在洋梨的底部割一小片让洋梨可坐稳。等水煮沸后,加入糖,蜂蜜和柠檬汁一起搅拌均匀。把洋梨加入锅内,确保水盖过洋梨。

Cook the pear with medium-low heat for 15-20 minutes until tender and easily poke in with a bamboo stick.
以中小火煮15-20分钟至洋梨果肉变软即可。(果肉的柔软度可用竹签顺利的插入即可)

Remove the pears from the syrups and let them cool. Then, use a teaspoon to remove the core from the bottom of the pear and use a knife to make vertical cuts with the pears are sitting upright.
把洋梨从糖浆取出,放一旁冷却。之后,用小汤匙从底部把洋梨芯挖出后,让梨子立着坐的姿势再用小刀把果肉由上往下的划一刀。(注意:梨子的上部位不要切断)

Fill the tart crust with the chocolate custard.
把巧克力卡士达酱填满在酥脆的饼塔上。

Let the pears sit on the custard. Lightly push the pear downwards and twist it to make fanned effect.
让梨子坐在卡士达酱上,然后轻轻往下压再稍微扭转一下,梨子就会像扇子般的打开。

Sprinkle some cinnamon on top and ready to serve =) Done !
