Tomorrow is my husband’s birthday. So, I made this oreo cookies & cream cheesecake as his birthday cake.I’m planning to surprise him when he is back from work ^.^ I feel so nervous and excited because the cake is done before the day of his birthday,and I hidden the cake in the most secret corners of the refrigerator (I hope that he did not notice the cake..^.-hee ) Then, I will cook the dinner and make this day a most special day for him.. I have no expensive birthday present for him, the only thing i can do is cook a warm dinner and homemade cheesecake for him ❤ ❤ ❤ This creamy oreo cheesecake not only easy and quick to make, just throw all the ingredients and it’s done. 明天是邹先生的生日。所以，我做了oreo芝士蛋糕作为他的生日蛋糕。我计划在他下班回家后给他一个惊喜^.^我觉得好紧张又很兴奋，因为这蛋糕在他生日前一天就完成了，而我已经偷偷的将蛋糕藏在冰箱最隐秘的角落（希望他没察觉..嘻嘻^.-) 之后，我将会下厨煮晚餐，让这一天成为他最特别的日子。我并没有贵重的礼物给他，唯有献上一顿温暖的晚餐及自家的手工蛋糕 ❤ ❤ ❤ 浓郁的芝士蛋糕不仅简单又快速，只要把所有材料加入就能完成。让我们开始吧～
[Crust Ingredients/ 饼皮食材]
Cookies crumbs – 130 grams
消化饼 － 130克
Butter – 30 grams (melted)
奶油－ 30克 （溶化）
Brown sugar – 2 Tablespoons
黑糖 － 2 汤匙
[Cheesecake Filling / 芝士馅料］
Evaporated milk – 120 Cc
淡奶 － 120Cc
Cream cheese – 150 grams
奶油起司 － 150克
Sugar – 30 grams
Lemon juice – 1 Tablespoons
Vanilla extract – 1 teaspoons
Oreo cookies – 8 pieces (crushed)
Oreo饼干 － 8片（压粹）
Steps / 步骤：
Combine the cookies crumbs and brown sugar in a bowl. Add the melted butter, stir well and press into cake pan. Then put into refrigerator until set.
Slightly crushed the oreo cookies.Set aside .
1)Pour cold evaporated milk into a bowl and whisk until peak.
*I use evaporated milk as substitute heavy cream. It helps to reduce fat and calories. First, you need to chill the milk for at least 30 minutes, and beat the milk for 1 minutes on high speed until very frothy.Then, add the sugar gradually , continue beating for 2 minutes until mixture is stiff. The texture similar whipped cream (I forget to take a photo,can’t show you guys right here.)
2)Combine cream cheese, sugar, salt, lemon juice, vanilla and whisk until smooth.
3)Gently fold in whipped cream and oreo cookies, fold until just combined.
4)Pour the filling into crust and garnish with extra oreo cookies crumbs. Lastly, refrigerator overnight until set.
