Matcha Carrot Pound Cake



Today’s recipe is simple and healthy macrobiotic carrot pound cake. It is fun to making a pound cake! You can simply change your favorite ingredients to make other type of pound cake. This was my second times to bake a pound cake. The previous one was the pumpkin flavor with steam way to cook. However, this time I baked it, and the cake contain a lot of shredded carrots, almonds and raisins without any dairy product and butter. So, it is an extra nutrition cake. The interesting part is the natural colour combination of the cake. The green with orange colour look wonderful !  I love that beautiful colour combination =) For the Green layer of the cake is matcha green tea flavor with sesame seeds and the Orange layer is full of nuts, raisins and carrot flavor. Now, you can enjoy two flavour in the same time ~ Sound great right ? !!! ^.^

今天的食谱是非常简单又健康的胡萝卜磅蛋糕。制作磅蛋糕的乐趣很多,你可随性搭配喜爱的材料并制造出不同类型及口味的磅蛋糕。这是我第二次制作磅蛋糕。之前所分享的是蒸南瓜磅蛋糕而这次我以烘烤的方式来制作。蛋糕中含有大量的胡萝卜丝,杏仁和葡萄干而且不加任何奶制品及黄油。所以呢,它绝对是一个营养丰富的磅蛋糕!这蛋糕有趣的是组合了天然颜色的搭配,一橘一綠的双色外观並呈現出磅蛋糕的漂亮層次,同时也讓妳享用两种不同的口味~ 听起来是不是很棒呢? 这颜色的看起来非常的亮眼而且我非常喜欢这组合颜色的搭配=)对于绿色层的蛋糕是抹茶与芝麻口味,而橙色层是挤满了坚果,葡萄干和胡萝卜的口味。这绝对是一个营养丰富又健康的家庭式磅蛋糕!

Ingredients / 食材:-

*Pre-heat oven at 180 C / 预热烤箱180度

[Dry Ingredients/ 干性食材:]

Cake flour – 100 grams (sieved)
低筋面粉- 100克 (过筛)

Whole wheat flour – 50 grams ( sieved)
全麦面粉-50克 (过筛)

Brown sugar – 40 grams

Baking powder – 2 teaspoons

Cinnamon – 1 teaspoon

Salt – 2 pinch
盐巴- 2小撮

[Wet Ingredients/湿性食材:]

Unsweetened soy milk – 100 ml

Grapeseed oil – 1 tablespoon

Honey – 2 tablespoons


Carrot – 100 grams (shredded)

Almond nuts – 40 grams ( roasted & crushed )
杏仁-40克(烤过 & 切粹)

Raisins – 40 grams
葡萄干- 40克

White sesame seed – 10 grams (garnish)
白芝麻-10克 (装饰)

[Green tea Paste/抹茶糊]
Green tea powder – 2 teaspoons
抹茶粉 - 2小匙

Soy milk – 1 1/2 tablespoons
豆奶- 1 1/2 大匙

*Mix in both ingredients together until become smooth green tea paste and mix with small amount of batter

Steps/步骤 :
1) Combine the dry ingredients in a big bowl and mix together with a whisk. In a small cup , mix in all the wet ingredients and stir until well combine. Then pour the soy milk mixture into flour mixture and mix well.
**scoop out some batter to mix with green tea paste


2) Add the shredded carrots, chopped almonds and raisins , fold in with spatula .

3) Pour the carrot batter into the pan.

4) Cover the green tea flavor batter, use the spatula slightly smooth the batter and sprinkle some white sesame seeds.

5) Pre-heat oven at 180C and bake for 30-40 minutes until insert the toothpick come out clean. Done =)
