Skinny Tuna Muffins

English muffins can be said that is a quick bread recipe which can be sweet or savory. It can serve as part of breakfast, lunch or just as a snack.I just treat them as my lunch today ^.^ It is super duper tasty, love it! As usual, I like to try to make my baking food more healthy and low fat. So, in this muffins recipe I didn’t add any butter and dairy products but the result come out great. It tastes so yummy~ Homemade always the best, agree ?!

英式玛芬可说是属于一种快速面包。玛芬口味千变万化,有甜的也有咸的口味。玛芬不旦可作为早餐,午餐甚至可以当零嘴般享用。今天我的午餐就只享用这些哦Y(^_^)Y 口感超级的棒!! 如往常一样,我比较喜欢尝试一些低卡及健康为主的烘培美食。所以,在这食谱当中我并没加任何的奶油及乳制品,但烤出来的效果非常棒,很美味哟~ 亲手自制的永远是最赞,同意吗?!

Ingredients/ 食材:-
* Pre-heat oven at 190C / 预热烤箱在190度

[Dry ingredients/ 干性食材]

Plain flour – 130 grams
低筋面粉- 130克

Whole wheat flour – 50 grams
全麦面粉-50克

Sugar – 25 grams
砂糖-25克

Baking powder – 1 teaspoon
泡打粉-1茶匙

Baking soda – 1 teaspoon
苏打粉-1茶匙

Salt – 2 pinches
盐巴-2小撮

Tuna chunk – 60 grams (canned)
金枪鱼块- 60克 (罐头)

Onion chopped – 50 grams
洋葱丁-50克

Red bell pepper -50 grams
红甜椒-50克

[Wet Ingredients/湿性食材]

Unsweetened Soy milk – 120ml
无糖豆浆-120毫升

Grape Seed oil – 40 grams
葡萄籽油- 40克

Lemon juice – 1 tablespoons
柠檬汁-1汤匙

Steps / 步骤:-

1) In a mixing bowl, sieved in the dry ingredients and mix well.
在搅拌盆里筛入干性食材,拌匀。

2) In the small cup, mix in the lemon juice with soy milk, stir well and let sit for 5 minutes(the soy milk mixture will become more thicker texture.) Last, mix in the grape seed oil and stir until well combine.
在小杯子里,倒入柠檬汁与豆奶一起混合再静放5分钟(此刻豆浆混合液体会开始呈现比较稠的质地)。最后,混合葡萄籽油再充分的搅拌均匀即可。

1) Heat the pan with medium low fire. Add in little olive oil and pan fry the chopped onion and red bell pepper until aroma.
开中小火预热锅子。加入少许的橄榄油,然后把洋葱丁与红红甜椒一起拌炒至香气。

2) In a small bowl, slightly shred the tuna into small pieces and add little bit of black pepper powder to taste.
在小碗里稍微将金枪鱼片切粹,再加入一些的黑胡椒粉做调味。

3) Add in the onion chopped, red pepper chopped and tuna into flour mixture, slightly stir.
将炒好的洋葱丁,甜椒丁,金枪鱼一起倒入粉类食材里再稍微拌一拌。

4) Pour in the wet mixture into dry ingredients and stir until well combine. (do not over mix the mixture, this will affect the taste and the texture of muffins)
将湿性食材与干性食材一起混合均匀。(不可过于搅拌面糊,这会影响玛芬的口感与质感)

5) Grease a thin layer of vegetable oil on muffin tray.
在蛋糕模具里涂抹薄薄一层的蔬菜油。

6) Scoop the batter put into muffin tray and bake at 190C for 20-25 minutes or until golden brown and insert the toothpick come out clean.
舀面糊放入蛋糕模具里, 以190度烘烤20-25分钟 或直到金黄色及插入竹签取出来是干净即可。

7)Done ! 完成!
