Cocoa Carrot Cake

After a long holiday, finally get back to normal housewife lifestyle. Now,I’m feeling great and everyday full of positive energy ^0^ Hope you guys doing well too. Okay, let’s begin with my 1st baking recipe in 2015 today ^-^ This is the great homestyle carrot cake that easy to make. I added cocoa powder and the finely shredding carrots gives this cake an extra-nice texture and full of fragrant. In this recipe, I added 1 egg and butter to make the cake moist,softer and increase more aroma of this cake.So, let’s start our recipe today =)

经过了漫长的假期,终于回到了正常的家庭主妇生活。现在的我感觉好极了,每天都充满了正能量Y(^_^)Y 希望大家也一样!好吧,让我开始这2015年的第一个食谱吧~ 这是简单不复杂却很棒的家庭式可可红萝卜蛋糕。在蛋糕里加入了可可粉及大量的红萝卜丝,不但没有萝卜特殊的味道反而增加了一份层次的口感及充满了芬芳。在萝卜蛋糕里,我还加了蛋和奶油让蛋糕更湿润,松软和提升蛋糕的香气,让不爱吃萝卜的你也开始心动起来=)

Ingredients /食材:-

Plain flour – 100 grams
低筋面粉-100克

Carrot – 100 grams (shredded)
红萝卜- 100克(切丝)

Unsalted butter – 85 grams (room temperature)
无盐奶油- 85克 (室温)

Sugar – 90 grams
白糖-90克

Unsweetened Cocoa powder – 10 grams
无糖可可粉-10克

Baking powder – 1 teaspoon
泡打粉-1茶匙

Cinnamon powder – 1 teaspoon
肉桂粉-1茶匙

soy milk – 20 ml
豆奶-20毫升

Egg – 1 eggs
鸡蛋-1粒

Salt – a pinch
盐巴-1小撮

Raisins – 20 grams
葡萄干-20克

Coconut flakes – small amount (use for garnish)
椰丝-适量(用来装饰)

Steps/ 步骤:-

1) In a mixing bowl, whisk butter,sugar and salt until white and fluffy.
在搅拌碗里,放入奶油,糖和盐巴搅拌至变白和松软的状态。

2) Pour in the egg mixture gradually and combine until very well.
逐渐的倒入蛋液再搅拌均匀。

3) Sieve in the flour , baking powder ,cocoa powder and cinnamon powder. Combine both mixture until smooth then add soy milk and stir until combined.
篩入面粉,泡打粉,可可粉和肉桂粉。之后,搅拌至顺滑再加入豆奶拌匀即可。

4) Add the shredded carrot and raisins then stir until combined.
加入萝卜丝和葡萄干,混合均匀。

5) Pour the cocoa batter into cake pan and sprinkle some coconut flakes on top.
将可可面糊倒入蛋糕烤盘里,再撒上少许的椰丝在面糊上。

Pre-heat oven at 180C and bake for 40-45 minutes until insert the toothpick come out with clean. Done !
预热烤箱在180度,烘烤40-45分钟直到竹签插入蛋糕中心,取出来是干净的。完成!
