Caramel Almond Bars

After the long break, now is the time for me to start my little baking ^.^ Today, I want to share with you guys a delightful pastry treat that you can easily make at home. The sweet caramel topped with almonds and the buttery crust melts in your mouth ! It is a great flavor combination, you will definitely going to try this recipe ^.-

经过了一段长时间的休假后,现在是时候让我开始我的小小烘培啦^_^ 今天,我想与大家分享一份在家里也可轻易上手超级美味的小甜点。甜点的焦糖香甜,搭配烤成金黄色泽的杏仁片及一层酥脆奶油酥饼将会溶化在你嘴里,甜在心里哟~ 这绝对是一份很棒的甜点风味组合,你一定要试一试 ^.-

Ingredients / 步骤:-

(A) Crust/ 饼底 :-

Cake flour – 220g
低筋面粉-220克

Unsalted butter – 100g (room temperature)
无盐奶油- 100克 (室温)

Caster sugar – 50g
细砂糖-50克

An Egg
一颗鸡蛋

(B) Filling/馅料 :-

Almond – 100g
杏仁片-100克

Roasted black sesame – 10g
烤过黑芝麻-10克

Roasted white sesame – 30g
烤过白芝麻-30克

Unsalted butter – 90g
无盐奶油-90克

Caster sugar – 40g
细砂糖-40克

Fresh milk – 40ml
鲜奶-40毫升

Honey – 40g
蜂蜜-40克

Steps / 步骤:-

[To make the crust/制做饼底 ]

1) Whisk the butter and sugar until light and fluffy.
利用打蛋器将奶油和糖一起搅拌至顺滑,蓬松即可。

2) Gradually add the beaten egg and mix well .
逐渐加入蛋液,再混合均匀。

3) Sieve all the flour into mixer bowl.
一次性的筛入面粉。

4) Use the scraper and mix the flour in cutting way. Lightly press until become dough form.
利用刮板以切割的方式将面粉混合直到不见粉粒,然后用手整成面团。

5) Wrap with plastic wrap and keep into fridge for at least 1 hour .
用保鲜膜将面团包起来,再放入冰箱里冷藏至少1小时。

6) Flatten the dough with rolling pin and prick the surface with a fork.
使用擀面棍将面团擀平,然后用叉子在面团上均匀地戳出小孔.

7) Preheat oven at 180c , bake for 10-12 minutes or until the edges are golden brown. Then set aside.
預熱烤箱在180度C,烤10-12分钟或直到饼干的周边呈现金黄即可。放一旁备用。

[To make filling / 制做馅料]

1) Heat up the pan with low medium fire, pan fry (without oil) the almonds until golden brown.
* Or preheat oven at 150c and bake for 10-15 minutes or until golden brown .

开中小火预热平底锅,不放油的翻炒杏仁片直到金黄色即可。
*或是预热烤箱在150度c,烘烤10-15分钟直到杏仁片变金黄色即可。

2) Mix together the almonds , black sesame and white sesame.
将烤后的杏仁片,白芝麻和黑芝麻一起混合均匀。

3) Heat the saucepan with medium fire, mix the butter, milk, sugar, honey and bring it to boil.
开中火,锅内倒入奶油,鲜奶,砂糖,和蜂蜜,一起搅拌至溶化直至沸腾后表面出现泡泡。

4) Slowly pour the almond mixture. Turn off the fire ,stir the almonds mixture until fully coated with caramel sauce.
慢慢的倒入杏仁混合物。熄火, 搅拌至所有的杏仁片都粘上焦糖液。

5) Pour the caramel mixture over the prepared cookies crust and use the spatula to spread evenly.
把焦糖杏仁片倒在已经烤好的脆饼上,再用刮刀抹平抹均匀。

6) Preheat oven at 180C , bake for 15-20 minutes or until the almonds turned golden brown and caramel is bubbling.
预热烤箱在180度C,烘烤15-20分钟或直到杏仁片烤到金黄和焦糖冒泡泡。

Cool in pan and cut into bars. Done !
将焦糖脆饼冷却后再切成小块状即可。完成 !
