White Coffee Pumpkin Seeds Biscotti

White coffee is one of the favourite drink in my house. During the tea time, my mom and dad sure will enjoying a cup of white coffee with biscuits. So, here is the white coffee flavoured biscotti that I special made for them as tea time treats =) This crunchy, aromatic biscotti with pumpkin seeds are perfect for dipping into your cup of coffee .

在家中,白咖啡是最欢迎的热饮料之一。在午茶时间,爸爸和妈妈总会泡一杯热腾腾的白咖啡并坐在屋里的某个角落下,慢慢的吃一口饼干,再喝一口咖啡。所以,这白咖啡口味的意大利脆饼是特地为他们的下午茶所制的=)饼干的酥脆,白咖啡的芳香及加上大量的南瓜籽,配上一杯暖呼呼的咖啡,浸入饼干,咬起来特别满足~

Ingredients / 食材:

Cake flour – 200g (sieved)
低筋面粉 - 200克 (过筛)

Unsalted butter – 50g (room temperature)
无盐奶油-50克 (室温)

Caster sugar – 80g
细砂糖-80克

Baking powder – 2g
泡打粉-2克

Pumpkin seeds – 60g (roasted)
南瓜籽-60克 (烤过)

Egg – 2pcs
鸡蛋-2颗

Salt – 3g
盐巴-3克

* Coffee mixture – Instant white coffee (5g) + warm water ( 1 teaspoon)
*咖啡液- 即溶白咖啡(5克) + 温开水 (1茶匙)

[Steps / 步骤]

Foto-biscotti

1) In a large bowl , cream the butter and sugar until white and fluffy.
在搅拌盆里,将奶油和细砂糖一起打发至蓬松,颜色变白。

2) Add 1 egg yolk and mix until combine. Then add the beaten egg little by little and beat until light and fluffy.
加入1颗的蛋黄,打匀后,再逐渐加入蛋液,继续打匀。

3) Pour in the white coffee mixture , mix well.
倒入白咖啡液,混合均匀。

4) Sieve in the flour,baking powder , salt and mix well.
筛入低筋面粉,泡打粉,盐巴,再混合均匀。

5) Add in the pumpkin seeds, mix until incorporated and knead by hand become as dough.
加入南瓜籽,再用手揉成团即可。

Foto-biscotti 2

1) Divide the dough into 2 portions.
将面团分成2份。

2) Roll each portion into a log shape .
把2份面团各整成长条状。

3) Flatten the dough about 1-2cm of thickness. Place the logs onto baking pan.
把长条状的面团稍微按压至1-2公分的厚度,再放在烤盘上。

4) Pre-heat oven at 180C, bake 20 minutes or until firm.
预热烤箱在180度,烤20分钟或烤至定型。

5) Cut the loaf into slices about 1cm wide. Flip over,  bake on one side at 160C , 15-20 minutes then turn them over to do the other side. Done !
将定型后的饼干取出,横切1公分的薄片。把饼干翻面,放入烤箱以160度C, 烤15-20分钟。之后,再次翻另一面以同样温度继续烘烤即可。完成!
