Spinach Mashed Potato Baked Egg 

|菠菜馬鈴薯泥烘蛋|

鸡蛋做料理是一道很家常的菜谱,几乎三餐都少不了鸡蛋这个重要的食材。今天的晚餐再次把烘蛋端上桌!烘蛋料理​​可说是百变美味,小小一颗蛋可搭配任何的食材做出百变料理。之前,分享了经典的西班牙烘蛋,而這次把马铃薯压成泥做成烘蛋的底馅, 倒入菠菜蛋液,再放入烤箱烘烤至外皮金黄酥脆的口感~

[材料/ Ingredients ]

鸡蛋- 2粒
Egg- 2pcs

菠菜- 适量 (切小段)
Spinach – Little amount (cut into small pieces)

马铃薯- 1粒
Potato- 1pc

调味料: 少许盐巴,黑胡椒,干的香菜片及新鲜豆奶1汤匙
Seasoning : little amount of salt,black pepper,dry parsley and 1Tbsp of fresh soya.

[步驟 / Steps]

1)开中小火,倒入1小匙的橄榄油,稍微把菠菜炒软。放一旁备用。
Open small medium heat, pour 1 teaspoon of olive oil, stir fry the spinach until soft. Set aside.

2) 把马铃薯先蒸熟至软,再压成泥状。然后加入调味料如盐巴,黑胡椒,干的香菜片和豆奶,拌匀。
Steamed the potato until soft and mashed it. Then, seasoning with salt, black pepper, dry parsley and soya, mix well.

3) 在盘子上涂抹一层薄薄的奶油(以方便脱模)
Coated a thin layer of buter ( to prevent stick on the plate)


1) 把马铃薯泥均匀的压平。
Press the mashed potato evenly.

2) 再用叉子在在表面戳洞。
Use a fork to poke some holes on the surface of mashed potato.

3)预热烤箱在200度C, 烘烤15-20分钟或直到马铃薯泥带微微的焦黄和表面干燥。
Preheat oven at 200c and bake for 15-20mins or until golden brown.

4)把菠菜混合在蛋液里,再倒入已经烘好的马铃薯泥盘子里。
Mix the spinach together with beaten egg, and pour into golden brown mashed potato.

再次送进烤箱以200度,烤35-40分钟直到蛋完全熟透即可。完成!
Put into oven again and bake another 35-40mins or until the eggs are fully cooked. Done!
