Hong Kong Egg Tart with Cheese

|港式芝士蛋挞|

港式蛋挞一点都不陌生,在电视港剧里都会一提的午茶点心。我一直很想尝试制作,但一拖再拖,终于等到适当的情绪来了再把蛋挞给完成!纯口味蛋挞的香气满溢但加上芝士片口感层次更丰富,而且更勾出咸香的滋味~其实,这概念来自我家乡的一个著名蛋挞店而老板以不藏私的态度在店面外制做。所以,每当客户到店面购买时都可看见制做蛋挞的过程。我也不经意的把老板秘籍记在脑海里^_^ 这时候,即可派上用场,照着老板的方法在蛋挞上加上芝士!经过高温的烘烤,芝士会随着溶化,一刀切开蛋挞可见双层混合的口感。一层是滑溜溜的蛋香布丁口味,而底层则带有微微咸度的芝士味,两种不同层次的口感并带给你不一样的滋味~

食材/Ingredients
[塔皮/Pastry dough]

低筋面粉-90克
Cake flour- 90g

糖份-20克
Icing sugar- 20g

芝士片-2片
Cheese slices- 2pcs

无盐奶油-50克 (室温)
Unsalted butter- 50g (room temperatures)

蛋黄-1个
Egg yolk- 1pc

海盐-1小撮
Sea salt – 1 pinch

[布丁馅/Pudding]

鸡蛋 - 2粒
Egg – 2pcs

豆奶- 125ml
Soy milk- 125ml

细砂糖- 45克
Caster sugar- 45g

香草精-1茶匙
Vanilla extract- 1 teaspoon

Steps/步骤
[制做塔皮/To make the pastry dough]

Cheese egg tart1

1)在搅拌盆里将室温奶油打软,加入糖粉和盐搅拌均匀,再加入蛋黄拌匀。
In the mixing bowl cream the butter and sugar. Adding egg yolk and mix well.

2)低筋面粉分两次加入(记得要过筛)混合均匀成团。
Sieved the flour and adding it gradually, mix well until become a dough.

3)用保鲜膜把塔皮面团给包起,放入冰箱里冷藏30分钟。
Wrap the pastry dough with plastic wrap and put into fridge for 30 minutes.

4)取出冰硬后的塔皮,分割成6份。
Take out the pastry dough from refrigerator and divided them into 6 pieces.

Cheese Egg tart 2

1)取一块分割好的小面团,将它滚圆沾上面粉,压扁并均匀的把模具中的空间填满。
*我使用的是防粘杯子蛋糕模具。如果是使用蛋挞模具,记得先刷上一层薄油再撒些面粉(这样比较好脱模)。

Take a small piece of pastry dough, coated with some flour and roll into ball shape.Flattening it and line evenly the pastry dough into mold.
*I used cupcakes mold as egg tart mold. If using egg tart molds, remember to coated a thin layer of vegetable oil and sprinkle some flour to avoid stick harder inside.So that the egg tarts comes out easily.

2)把芝士片切小块,放在每个塔皮模具上。
Cut the cheese slices into small size pieces and place into each pastry molds.

[制做布丁馅/To make the custard pudding]

1)将鸡蛋打散,加入香草精,搅拌均匀。放一旁备用。
Crack and beaten the eggs, add vanilla extract and stir until combine. Put aside.

2)开小火,把豆奶和细砂糖放入锅里加热,煮至糖溶化,熄火。
In a sauce pot, combine soy milk and sugar. Stirring and cook with small heat until sugar dissolves.Then turn off the heat.

3)将微温的豆奶和蛋液一起混合均匀。
Mix the warm soy milk with egg mixture together. Stir until combine.

4)将混合好的蛋液过筛,再平均的倒入塔模里至9分满。
Sieve the custard mixture and pour the custard filling into molds.

5)预热烤箱在180度c , 烘烤20-25直到布丁馅凝固即可。
Preheat oven at 180C , bake for 20-25 minutes until the custard filling has solidified.

6)稍微冷却后,把蛋挞取出。
Remove the egg tarts when egg tarts are cooling down .
