Cocoa Sponge Cake

奶油蛋糕装饰是我一直不敢尝试的蛋糕之一!原因是我本身比较抗拒高热量的甜食,而且自已也不爱吃甜腻厚重的奶油霜蛋糕。所以,我一直都没在分享类似奶油霜蛋糕的食谱。在小时候的记忆,水果蛋糕常见于在生日派对上。每人送上一份蛋糕块,我只吃蛋糕体和水果块而奶油馅的部分我会用小汤匙把它抠掉(不是不好吃,只是我不爱吃而已^_^)一直到现在,我还是少选择覆盖奶油霜的蛋糕,不过少许的奶油夹馅还是可在我接受的范围内~ 拖了一段时间后,终于有机会做了一款自已喜爱低卡又健康并可取代油腻厚重的传统奶油馅蛋糕!可可海绵蛋糕上所使用的乳白色馅料是采用豆腐调制而成的豆腐忌廉。豆腐忌廉的口感比较轻盈,吃起来不会有油腻的负担,反而带出一股清淡的豆香味,让可可海绵蛋糕变得自然又清新的滋味~ 蛋糕味道清雅,甜而不腻,正合我们夫妻俩的口味!而且献给家中的长辈们当祝寿蛋糕也是很不错的选择哦^_^

食材/Ingredients:-
[豆腐忌廉/ tofu cream]

板豆腐-300克(去除水份后 285克)
Firm tofu – 300g (drained 285g)

蜂蜜- 2大匙
Honey – 2 Tbsp

海绵蛋糕/ sponge cake:-
[6″蛋糕模具 / 6″cake pan]

蛋白- 3个 (室温)
Egg white – 3pcs (room temperature)

细砂糖- 100克
Caster sugar – 100g

蛋黄-3个 (room temperature)
Egg yolk – 3pcs (室温)

低粉-80克
Cake flour- 80g

豆奶- 50毫升
Soy milk – 50ml

黄油- 30克
Butter – 30g

可可粉- 20克
Cocoa powder- 20g

巧克力-30克
Chocolate – 30g

香草精-1茶匙
Vanilla extract – 1 tbsp

步骤 / Steps:-

1)事先将豆腐洗净,切块,放入沸腾水的锅中汆烫5-6分钟除去豆腥味。然后豆腐取出后,用厨房纸巾沥干水份,再用盘子堆叠2小时在豆腐上,把多余的水份逼出来。过程中会更换厨房纸巾。水份沥干后,把豆腐装入容器里,放入冰箱冷藏。想用到豆腐做料理,再取出来即可使用。
*此方法适合用在板豆腐
*建议冷藏保存期为2-3天

1)Gently rinse the tofu, cut into small pieces, put into hot pot and boil for 5-6 mins to remove the smell of soy beans.Then, drain and wrap with kitchen towel. Put a heavy bowl or plate over the tofu and let the tofu with the weight sit at least 2 hours. The weight will help release all the water in the tofu and the kitchen towel will absorb it (change the new piece of kitchen towel when it absorb too much water. ) When tofu is done, keep them inside the airtight container and put into fridge.
*this method only apply to firm tofu
*recommend storage period is 2-3days

p/s:
* For silken tofu – adding some salt into hot water and pour the water mixture and soak tofu for few minutes.

*For dried tofu – cut the tofu into slices, pour the hot water and soak for few minutes.

1)将豆腐放入搅拌器里,打至顺滑。
Put the tofu pieces into blender and blend until smooth.

2)加入蜂蜜,搅打均匀即可。
Add honey and mix well.

3) 放入冰箱冷藏让豆腐忌廉稍微凝固,备用。
Set aside into fridge and let the tofu cream become more firm.

制作海绵蛋糕 / To make sponge cake :-

*预热烤箱在170度c
*Preheat oven @ 170C
*将蛋糕模具抹上薄薄一层奶油再铺上烘焙纸
*Coated a thin layer of butter and line with baking paper.

1)将巧克力和黄油放入微波炉叮热1分钟,搅拌均匀。
Use a microwave to melt the chocolate and butter for about 1 minute, mix well.

2)倒入豆奶,拌匀。筛入可可粉,搅拌至无粉粒。备用。
Pour in the soy milk, mix well. Sieve in the cocoa powder and mix until smooth. Set aside.

1)[分蛋式的搅打]把蛋白加入在搅拌盆里,以高速搅打至粗泡状。砂糖分三次加入,以中速继续搅打至比较细腻的状态,再加入第二次的砂糖。打至蛋白呈现软尖峰时,把全部的砂糖倒入盆中,将蛋白打至硬性发泡(拿起打蛋器,会有小弯勾的状态即可)。

[Separated egg method] Place the  egg whites into mixing bowl, beat on high speed until foamy.Gradually add 1/3 sugar , continue beat with medium speed until soft peaks. Adding all sugar and continue beating until the egg whites are shiny and just form stiff peaks ( the meringue will form a small hook shape when lifted up ) .

2)加入蛋黄和香草精(一次加入一个蛋黄),打匀后再加入第二个蛋黄(每加入一个蛋黄都要搅打均匀)。
Add egg yolk and vanilla ( add 1 egg yolk in a time) , and whisk well after each addition until smooth.

3)筛入面粉,以轻柔而快速翻拌的手法把粉末和面糊混合均匀。
Sift the flour and gentle but quickly fold the flour into meringue until well incorporated.

1)取1/3的面糊和可可糊一起混合均匀,再将混合好的可可糊一起倒入蛋白糊里,拌匀。
Adding 1/3 of meringue mixture with cocoa batter, mix well. Then add the well combined mixture into the remaining meringue and stir until well incorporated.

2)将面糊倒入蛋糕模具里,然后在桌上轻震两下,消除蛋糕里的大气泡。
Pour the batter into cake pan, then gently tap out the air bubbles.

3) 预热烤箱在170度c , 烘烤30-40分钟或蛋糕表面呈现金黄色,竹签插入蛋糕的中心取出时是干净的,那就表示蛋糕已经烤好了。
Preheat oven at 170C, bake for 30-40 minutes or the top of cake is browning. When insert toothpick into center of cake and comes out with clean.

1)蛋糕出炉后,从高处往下震一次,将底部的热气逼出。之后,在桌面放湿的面巾,将蛋糕倒扣。
After the cake freshly out from the oven, bang the cake pan against to remove the hot gas between cake and pan.Then, upside down the cake on the table which lined with wet towel.

2)脱模,把周围及底部烘培纸去掉,把蛋糕翻正,再盖上湿的面巾,等待冷却。
Remove the can pan and baking paper. Flip over the cake and cover with the wet towel until cake cool completely.

3)如果当时不使用的蛋糕可用保鲜膜包起,装入袋子里冷藏保存。在使用前,放在室温下回温或放入烤箱里在加热即可。

If the cake not to serve immediately, you can wrap a layer of plastic wrap,keep inside plastic bag and store into fridge. Before serving, let the cake warm up in room temperatures or heat up with oven.
