Honey glazed Sesame and Almond Anchovy Side Dish

|蜂蜜芝麻杏仁小鱼干|

一般上在吃韩国料理时都会附上一小碟的甜辣小鱼干当拌菜。一口白饭,再搭配微甜微辣的小鱼干拌着白饭一起吃,真的好开胃~ 在我记忆中的一道小鱼干家乡味料理是,金黄酥脆的小鱼干拌入很多的白砂糖及一大把已炒香的花生粒,口感是甜中带些咸味,每咬下一口都听见从嘴里发出酥脆卡兹卡兹的声音。这一口接一口,真让人一吃就上瘾。今天这道小鱼干料理和我家乡的味道有差异而且也比较健康养生。我用了蜂蜜取代砂糖,杏仁片取代花生粒,再加上含有丰富维生素的白芝麻做搭配。这道自制的蜂蜜芝麻杏仁小鱼干可说是添加了别一番的家庭风味~

[食材/Ingredients]

小鱼干 - 一杯(米杯的分量)
Dried anchovies – 1 cup (cup of rice)

蜂蜜- 2大匙
Honey – 2 Tbsp

杏仁片- 2大匙
Almond – 2 Tbsp

白芝麻- 1大匙
White sesame – 1 Tbsp

橄榄油- 1大匙
Olive oil – 1 Tbsp

胡椒粉- 适量
Pepper- small amount

[步骤/ Steps]

把小鱼干冲洗干净后,用厨房纸巾沥干多余的水分。
Rinse the anchovies with running water, then use kitchen towel to absorb the excess water.

1)开中火预热锅子,把小鱼干和杏仁片加入锅内,不停的翻炒至微微的酥脆金黄。
Heat pan with medium fire, put the anchovies and almond pieces into the pan. Stir constantly until slightly crisp golden brown.

2) 加入橄榄油,蜂蜜及白芝麻,拌匀即可离火。
Add olive oil, honey and white sesame, mix well and remove from heat.

完成!可拌饭或当成小零嘴吃 =)
*吃不完的,可放入冰箱里冷藏1星期。
*建议趁新鲜吃完,少量制作。

Done ! Serve with rice or treat as snack =)
*Can keep into fridge until 1 weeks, if really can’t finish all.
*Recommend to eat fresh and make it with small quantity.
