Leftover Egg Yolks Pudding

转眼间,农历新年即将来临,家家户户都忙着大扫除而厨房里的烤箱也在时候开始忙碌了起来。农历新年当然少不了新年特备的手工新年饼干,我也不例外!自从开始烘培后,近年来,妈妈家橱柜里的新年饼干都是我一手包办。看见橱柜上排得满满的红罐子,里头装入了亲手制作的饼干,让我感受到小小的成就和满满的新年气息!

最近身边的好友都纷纷爱上这口感酥脆的杏仁饼干。虽然外表朴素,薄薄一小片的杏仁脆饼,却赢得大家的欢心。每当有客人到访,我都把这饼干端上桌,无论是搭配咖啡或是茶饮都非常合适。制作这饼干的材料非常简单,纯用蛋白,糖和杏仁。但是,剩下来的蛋黄却是我最伤脑筋的问题!烘培中所剩下的白蛋可以冷冻储存,但剩下的蛋黄却无法以冷冻的方式保存。所以,尽量趁蛋黄还新鲜,赶紧用来做布丁当饭后的小甜点吧 ~ 我家的吃货(邹先生)非常喜欢这款滑嫩顺口又充满浓郁蛋香级奶香的布丁哦 😁 ~

[食材]

蛋黄- 4颗

原遮糖-30克

全脂鲜奶-440毫升

[做法]

1)将糖与蛋黄搅拌均匀。

2)逐渐倒入全脂鲜奶,拌匀。

3)把蛋奶液过筛后,再倒入杯子里。

4)将每个杯子都盖上一张铝铂纸。

5)蒸锅预热后,把杯子放入锅子里,中火蒸15分钟,熄火闷5分钟或至布丁凝固即可。
