[Nescafe Bread – 咖啡吐司]

打开烤箱,一股浓郁的咖啡香气肆意地绕着空气而飘出,弥漫了整个厨房及饭厅。在早晨准备一份咖啡吐司,涂上一层花生抹酱再淋上枫糖浆,二合一的夹在一起,那味道真的好迷人!

[食材/Ingredients]

高筋面粉-200克
Bread flour – 200g

全麦面粉-50克
Wheat flour- 50g

咖啡粉-20克
Coffee powder- 20g

砂糖-2汤匙
Sugar- 2Tbsp

盐巴-3克
Salt- 3g

奶油-20克
Butter- 20g

汤种-80克
water roux(Tangzhong)- 80g

即溶酵母粉-3克
Instant yeast- 3g

鲜奶-100毫升
Milk- 100ml

面团制作:

1)将鲜奶+油先倒入面包机模具里,再加入盐巴和其他粉类食材,最后再撒上即溶酵母粉
(*酵母和盐巴不要混在一起避免影响发酵作用)
(*鲜奶不要一次性加完,因为加了汤种,面团会很湿粘,所以要看面团的情况再调整。)

Place the milk ,oil, salt and sugar(except yeast and butter) in the pan of the bread machine.Lastly added yeast.

2)把吐司搅拌桶安装回面包机里,再按照说明书选择揉面功能。
Select Basic or dough setting, and press Start.Check your machine’s instructions and follow the steps.

3)等待面包机揉成面团后,取出,盖上保鲜膜让面团进行第一次发酵约60分钟。
When the dough is completely done, cover with plastic wrap and let the dough rest for 60mins (stage of fermentation).

4)当面团膨胀至两倍大后,用刮刀按压面团把面团里的空气排出。
When dough has risen double its quantity, punch it lightly and knead out the air.

5)将面团杆成长方形,左右两边对折,再将前尾端往里面折即可。放入蛋糕模具,盖上保鲜膜,静置第二次60分钟发酵至模具间的空隙填满即可。
Roll the dough into rectangle shape and fold it then place seam-side down in the pan. Cover with plastic wrap and let rest for 60mins until doubled in size.

6)预热烤箱在190度c,放入烤箱烘烤18-20分钟至表面金黄即可。
Bake in preheated oven 190 degree C for 18-20mins until golden brown.

7)出炉后,从模具取出,涂上一层奶油,放在架子等待冷却。完成!
Remove the bread immediately from the pans, coated thin layer of  melted butter and cool on a cooling rack. Done !
