Wholemeal Carrot Cake without Spices

|无香料全麦红萝卜蛋糕|

纯红萝卜蛋糕一直是自已寻找的滋味。我喜欢简简单单的加入核桃,葡萄干及大量的红萝卜丝,让朴素的滋味停留在口腔之中。有一次和老公在谈话之中,我问了他,你不爱红萝卜蛋糕的原因是什么?我想知道….(每一次在咖啡厅吃甜点都无法选择我最爱吃的红萝卜蛋糕)当下他告诉我说,“他不喜欢胡萝卜蛋糕里的香料滋味” 。当下的念头是,我要做出一款属于他爱吃的红萝卜蛋糕,我要挑战他的味蕾!这是自已调配过最满意的配方之一,而且蛋糕吃起来非常松软,刚刚好符合自已喜爱的口感,再搭配一杯热咖啡就是一天最完美的下午茶甜点了。

食材/Ingredients :

萝卜丝-1条
shredded carrot- 1pc

全麦面粉-100克
Wholewheat flour- 100g

低筋面粉-50克
Cake flour- 50g

黑糖-60克
Brown sugar- 60g

泡打粉-1小匙 + 1/4小匙
Baking powder- 1tbsp + 1/4tbsp

苏打粉-1小匙
Baking soda- 1tbsp

鸡蛋-2粒
Egg- 2pcs

香蕉-1条
Banana- 1pc

油-80克
Oil- 80g

萝卜汁-4大匙
Carrot Juice- 4Tbsp

核桃-30克 (切粹)
Walnut- 30g (chopped)

葡萄干-30克
Raisins- 30g

奶油乳酪酱/ Cream Cheese Frosting

奶油乳酪-100克 (室温软化)
Cream cheese- 100g (soften@room temperature)

糖粉-50克
Powdered sugar- 50g

香草精-1/2小匙
Vanilla essence- 1/2 tbsp

盐巴-1小撮
salt – a pinch

步骤/Steps:

[蛋糕体/ cake]

1)香蕉按压成泥状,加入鸡蛋拌匀+糖搅拌至融化+油+萝卜汁拌均匀。
mashed the banana, add egg + brown sugar + oil + carrot juice and mix well

2)把粉类一起过筛,倒入鸡蛋香蕉液体里,把核桃粹及葡萄干一起倒入,搅拌至无粉状即可。
Sieve all the dry ingredients, pour into banana mixture and add chopped walnuts together with raisins, stir until well combined.

3)预热烤箱170度c, 烘烤45分钟至熟即可。
Pre-heat oven at 170C, bake for 45mins until a toothpick inserted in the middle of the pan comes out clean.

[奶油乳酪酱/Cream Cheese Frosting]
将奶油乳酪和糖份一起搅拌成乳霜状,加入香草精&盐巴,搅拌均匀即可。
Beat cream cheese and powdered sugar until fluffy, add vanilla essence & salt, mix until well combined.

4)蛋糕放凉后,把奶油乳酪酱涂抹在蛋糕表面即可。
Let the cake cool down completely and then topped with cream cheese on the cake surface.

5)在奶油乳酪上,撒些杏仁粉当点缀。
Garnish with little almond flour on top of the cream cheese.
